This a nice way to use up Brussels Sprouts left over from the festive season.
- Brussels Sprouts
- 1 Sweet Potato
- 1 Leek
- Cut sprouts in half, slice sweet potato and leek and add to pot to soften.
- Then add 2 and a half pints of vegetable stock then bring to the boil.
- Then let simmer till ready to enjoy.
- Add fresh parsley.
